It is SO GOOD. And SO EASY! Five ingredients. That’s it.
It actually uses less apples than a typical apple pie… Only 2 to 3 if you can believe it – and if you use three you’ll probably have some apple slices left over! (More on that later!)

INGREDIENTS
2-3 large apples (I used honey crispy, gala, and fuji, as their moisture content ensure a more ‘bendy’ apple slice.)
1 package puff pastry, thawed. (I’ll be honest, I always buy two just in case and keep the remaining one in the freezer. You won’t be sorry you have it, but you might be if you’re a little short and without it.)
½ cup sugar
1 tablespoon cinnamon
4 tablespoons butter
DIRECTIONS
1) Preheat your oven to 375 degrees.
2) Lightly grease your pie dish or baking pan with one tablespoon of the butter.
3) Combine the sugar and cinnamon. Lightly dust the pie dish with some of the mixture, You’ll use the rest of the mixture later.
4) Core the first apple. Cut it in half and thinly slice each half. Try for as thin a slice as you can so it will bend more easily. I used a slicer or mandolin, but you can use a sharp knife if you choose. Place the apple slices in a microwave safe bowl. Continue on with the remaining apples. (Refer to the accompanying video for reference if necessary.)
5) To encourage an even ‘bendier’ apple slice, run the apple slices under very hot water, drain, and microwave for about 90 seconds. You’re not cooking the apples, you’re just lightly blanching and heating them for a more pliable result.
6) Unfold the puff pastry. Using a pizza cutter or knife, cut the pastry into long strips about two inches wide.
7) Melt the remaining three tablespoons of butter.
8) Start assembling roses one at a time. Take one strip of pastry, brush it with melted butter, and sprinkle the length with the sugar and cinnamon mixture. Place apple slices, slightly overlapping one another. across the length of the strip, allowing the curved side of the apple slice to extend over the top edge of the pastry. These are your ‘rose petals.’ (Refer to video for clarity if needed.) Fold up the bottom end of the pastry so you’ve essentially ‘sandwiched’ the bottom of the apple slices with the pastry dough, and sprinkle again with the sugar and cinnamon mixture. Carefully pinch one end of the strip and begin to roll the dough, keeping the apple slices in place, all the way to the other end, forming a rose. Pinch the dough to help the flower keep its shape.
9) Place the rose in the pie dish and repeat until the dish is full of roses.
10) When the pie dish is full, sprinkle the remaining sugar and cinnamon mixture over the entire arrangement.
11) Bake for 45-50 minutes, checking 30 minutes through to ensure the dough or apple slices aren’t blackening or burning. (They shouldn’t but every oven is a little different.) If you’re concerned about over-browning, cover with aluminum foil.
12) Remove from the oven, allowing it to rest and cool for at least 30 minutes.
13) Serve with vanilla ice cream!
NOTE: Because the sizes of apples and baking dishes vary, you may find yourself with extra slices or pastry dough. If that’s the case, these can be made and baked as individual roses. The cooking time is the same. Simply put one ‘rose’ in an oven safe bowl or dish and make a couple of extra for yourself!
